Don Quijote Kaheka Head Chef Ken Akazawa and Don Quijote Corporate Chef Koto Kawahara shared two of their popular recipes for our latest edition of Hawaii’s Kitchen at ChefZone. Chef Ken cooks up delicious Pork Eggplant with Miso Sauce and Chef Kota demonstrates the traditional methods of making sushi.
Don Quijote’s Donki Okazuya concept combines local and Japanese with traditional Japanese cooking methods and local ingredients. “We make twelve kinds of hot food items that are prepared and waiting for customers every day! We also make bento, musubi and side dishes every day,” says Chef Ken.
